I want to change the default currency from USD to INR.

To make this change I added a new currency in the table blc_currency as INR , 1 , Indian Rupee (Currency code, Default Flag, Friendly Name)

The same changes I made in the blc_locale table as ( en_US, 1, English US , NULL, INR)

By doing this change the USD is changed to INR on the frontend. But what if I want Rupee Symbol Just as the $.

is overriding PriceTextDisplayProcessor the only option for that?

You have to change the locale code to hi-IN instead of en_US to get the rupee symbol. It's trying to currently display the rupee currency in the en_US locale.
