Just because i'm curious, in which cases should we use the field "Url key" available in SEO properties ? I didn't found any example in your code.

This is used inadvertently in catalogService.findProductByURI(). I think the intention here is that you could simply use the URL key here from the product, which would be combined with the URL from the category, thus giving you "/default-category-url/product-url-key". So if you would like to keep the category portion of the URL in the product URLs, then set the key, else just set the full URL to the product and follow whatever conventions you like.
