Broadleaf inventory quantity control

Hi,
I´m very frustrated... I´ve spent the last couple of days building and rebuilding my test website and no matter what I do I can´t find a place to insert the quantity of a product... I´ve tried 3.0, 2.3 with inventory 1.1.0-snapshot .. I just can´t find it...
Can someone please point me any direction on the steps I should do to control the quantity of a item so my client don´t buy what I don´t have... All I see about inventory is :
Available, Inventory Type and Fulfillment Type which I have no clue on how to use ...
I´ve also checked EVERY piece of the documentation but couldn´t find anything explaining the inventory control...
PS.: I believe the inventory module is installed cause I cann see the tables created on MySQL and I´ve done every single step from:

I´m sorry for the tone, but I´m very frustrated. I loved the system, architecture and the fact the is made on Java so I could migrate a series of old PHP clients, but I really need the basic functions of an ecommerce cart to consider doing so...
